  A special long filleting knife with a medium flex!  This knife is made of high quality Swedish Sandvik cold-rolled stainless steel (12c27) & is hardened to Rc 57-58, with a nice polished finish. It is a great & excellent sharp knife with a high resistance to corrosion. The handle is a polypropylene handle reinforced with glass fiber for increased friction.
